VINSANTO DEL CHIANTI D.O.C. (Meditation - Dessert Wine)

Grapes: 80% Malvasia Toscana (Verdea)
5% Trebbiano Toscano
5% San Colombano
10% Sangiovese

This wine is produced from a rigorous selection of Malvasia Toscana berries (85%), Trebbiano Toscano berries (5%), San Colombano (5%) and Sangiovese (5%) which are taken from bunches left to dry for at least three months. The berries are then pressed in order to attain a rich must and within 12 hours placed in 150 litre caratelli. Their bungs sealed with cement, the small barrels remain undisturbed for 5 years beneath the eaves of our attic. Enduring constant temperature changes, the barrels go through various fermentations, resulting in a dessert wine of complex flavours.



 

ORGANOLEPTIC CHARACTERISTCS :
- Colour: intense amber yellow, warm and deep, lovely clearness and sustained fluidity.
- Aroma: good concentration with hints of dry figs, walnuts and preserves, and candied fruit which give the wine good character and complexity.
- Taste: a very definite taste, with a fruit bouquet. The sugar and alcohol structure are well balanced with a very persistent final taste.
- Alcohol: 15/18°
- Total Acidity: 6,5/7,5 %.
- Suggested gasrtronomical accompaniments: All desserts as well as aged cheeses like Gorgonzola and Roquefort, a wine for meditation
- Service temperature: 18/20°C.
