This
"revival" wine, cited in 1685 by Francesco Redi in his
book "Bacco in Toscana", is one of our proposals to re-evaluate
the antique traditions of the Valdarno. Historically, this wine
was the most widely known white wine of the region. The name Malvagia,
in fact, is the precursor to what is today called Malvasia.
The vinification of "Malvagia di Montegonzi" is unique
and mirrors the traditions of times past. Like our wine Beo, the
white wine grapes are not pressed but left to drain naturally. With
the help of modern temperature controls, the must is left to ferment,
decanted twice, and needs no clarification.
The limited production zone, the small quantities produced, and
the difficulties encountered in its vinificiation contribute to
the wine's rarity and historical significance
ORGANOLEPTIC CHARACTERISTCS :
- Colour: straw yellow with golden reflections.
- Aroma: intense of ripe fruit , with delicates scents of
vanilla and spices
- Taste: harmonious, ample end persistent.
- Alcohol: 12,5/13°
- Total Acidity: 5,5/6,5%.
- Suggested gasrtronomical accompaniments: Ideal with hors
d'ouvres, fish and white meat .
- Service temperature: 14/16°C.
- Service method: open the bottle 30 minutes before.
