100% Sangiovese of Tuscany
Taking
its name from the medieval word meaning Sangiovese, this wine is
just that-100% Sangiovese. It must be noted, however, that the grapes
used in this wine are of a selected Sangiovese clone-soon to be
given official government status with its own name, "Sangiovese
I Selvatici"- which has extremely small, concentrated berries.
In the vineyards at I Selvatici we began twenty years ago with 200
different Sangiovese clones. After years of study in the vineyards
and more than 500 micro fermentations, three of the original clones
were chosen for extensive planning and production.
After destemming, fermentation, and an extended maceration period,
the young wine is left to settle for 12 months in stainless steel
vats. When the remaining sediments have naturally settled to the
bottom of the tank, the wine is then decanted three times over a
period of 10 months. At that point the wine is placed in new, one-year-old,
and two-year-old French barriques for two months prior to bottling.
The wine is then bottled and left to rest for at least one year
prior to being released for sale.
ORGANOLEPTIC CHARACTERISTCS :
- Colour: intense ruby red with garnet hints.
- Aroma: intense, very persistent, fine ethereal
- Taste: dry, sapid, tannic, warm body, fairly soft, well-balanced,
intense, and persistent.
- Alcohol: 13,5/14°
- Total Acidity: 5/6 %.
- Suggested gasrtronomical accompaniments: The wine of great
structure should be matched to their complementary dishes such as
braised red meat and wild game ( wild boar, deer, vernison, hare)
- Service temperature: 18/20°C.
- Service method: open the bottle one-hour before.
